Electric mixers or wooden spoon?

gone are the days when i would be drowning in sweat while i manually mix my ingredients in a big bowl. i used to dread the sight of my wooden spoons as it only speaks of the pain my arms would have to endure to make several batches of brownies. with the invention of electric mixers, baking is now a piece of cake, literally. you could just dump everything in a bowl and set your mixer at the proper speed and let it do all the hard work. I've been very ecstatic when i first used my mixer, i didn't have to sweat in my little kitchen while i prepared several batches of brownies as requested for our family reunion. i just dumped my flour, eggs, butter, sugar, cocoa, baking powder and baking soda in a bowl and mixed it for several minutes. while it was mixing i was preparing the pans where i would be baking them. Hay!! easy!!! when i was about to pour them in the pan, i felt a sudden gush of conscience... "am i sticking to the traditional way of doing this?" "what if it won't come out as fudgy like when i used to mix it by hand?" all these ran in my mind while i contemplated if i should get my wooden spoon and mix it just to be sure. nah! it's all the same. oh well, let's just see what'll happen.

Simply chicken teriyaki, oh boy!!!

I always loved cooking meals for my hubby and two kids. They would always be excited whenever they see me tinkering in my little kitchen, expecting to have yet another tasteful and satisfying meal. Today though is different, I wasn't really in the mood to cook anything fancy.. Since it's been raining for like an hour already and all I wanted to do was tuck myself under the sheets and devour the book by John Grisham I just bought. Oh well, I can do that after. I wanted to do something hot and soupy but that would take quite a while so I decided to make chicken teriyaki for today. This recipe is so simple yet it is so delicious. My husband chides me while cooking that am losing my touch that's why am cooking meals that would only take less than an hour to make. If he only knew that the mere preparation and cooking of a meal is tiring and tedious to most women already!!

this recipe calls for:

4chicken breasts, cleaned and patted dry
6tbsps kikkoman soy sauce
4tbsps brown sugar, or you can opt to use 2tsps if you don't want it too sweet
1tsp grated ginger
1tsp grated garlic
2tbsp oil
2stalks spring onions
toasted sesame seeds, this is optional
julienned carrots
julienned cabbage

mix all ingredients aside from the sesame seeds in a large bowl and marinate you chicken for 2 hrs. Take out the chicken from the marinade after then set it on the grill and cook for 4mins on each side. Baste the chicken breasts to keep it moist and juicy. Set aside the chicken after grilling and prepare your vegetable stir fry. Place the oil in a very hot pan or wok if you have one. Stir fry all the vegetables but leave some spring onions for garnish. While waiting for the vegetables to half-cooked, slice your chicken into cubes. Add the marinade to the vegetables and lastly the chicken. Toss and simmer for 2mins. You can now place your chicken teriyaki on top of your steaming rice on a bowl and garnish with spring onions and sesame seeds. This would go well with some ice cold soda or lemon juice for the kids.
